Ingredients

  • 4 large chicken breasts
  • 1 cup almond flour
  • 0.5 cup coconut flour
  • 2 large eggs
  • 2 tablespoons water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon onion powder
  • 4 tablespoons coconut oil
  • 1 for serving lemon wedges

Directions

Step 1

Place the chicken breasts between two pieces of plastic wrap or parchment paper and pound them to about 1/4-inch thickness using a meat mallet or rolling pin.

Step 2

In a shallow dish, combine the almond flour, coconut flour, salt, black pepper, garlic powder, smoked paprika, and onion powder.

Step 3

In a separate shallow dish, whisk the eggs with the water until well combined.

Step 4

Dip each piece of chicken into the egg mixture, ensuring it's well coated, and then dredge it in the flour mixture, pressing lightly to adhere.

Step 5

In a large frying pan, heat the coconut oil over medium heat. You may need to do this in batches to avoid overcrowding the pan.

Step 6

Once the oil is hot, carefully place the coated chicken breasts into the pan. Cook for about 5 minutes on each side, or until golden brown and cooked through.

Step 7

Remove the schnitzels from the pan and place them on a paper towel lined plate to remove excess oil.

Step 8

Serve immediately with lemon wedges on the side for squeezing over the top.
