Ingredients

  • 200 grams Brazilian nuts
  • 100 grams Cacao butter
  • 50 grams Cacao powder
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Sea salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Spread the Brazilian nuts on a baking sheet and roast them in the preheated oven for 5-7 minutes. Ensure they don’t burn by shaking the pan occasionally.

Step 2

While the nuts are roasting, set up a double boiler over medium heat. To do this, bring a saucepan of water to a simmer and place a heatproof bowl over the saucepan, ensuring the bottom of the bowl does not touch the water.

Step 3

Add cacao butter to the bowl of the double boiler and melt it gently, stirring occasionally.

Step 4

Once the cacao butter is fully melted, reduce the heat to low. Stir in the cacao powder gradually, ensuring it is fully incorporated and smooth.

Step 5

Add honey and vanilla extract to the mixture, stirring continuously until well mixed.

Step 6

Take the roasted Brazilian nuts out of the oven. Allow them to cool slightly before adding to the chocolate mixture. Ensure all nuts are fully coated.

Step 7

Using a fork or a slotted spoon, lift each nut out of the chocolate and let excess chocolate drip off.

Step 8

Place the coated nuts onto a parchment-lined baking sheet. Sprinkle lightly with sea salt while still wet.

Step 9

Let them sit at room temperature until the chocolate has set, or refrigerate them for quicker setting.

Step 10

Store in an airtight container at room temperature (or in the fridge if your climate is warmer) for up to two weeks.
