Ingredients

  • 3 pounds Pork ribs
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 4 large Garlic cloves
  • 2 medium Carrots
  • 1 stick Celery stick
  • 2 tablespoons Tomato paste
  • 2 cups Beef broth
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 325°F (165°C).

Step 2

Pat the pork ribs dry with paper towels and season both sides with salt and black pepper.

Step 3

Heat olive oil in a large oven-safe pot over medium-high heat.

Step 4

Add pork ribs in batches and sear until browned on all sides. Remove and set aside.

In the same pot, add the sliced onion, chopped garlic, diced carrots, and sliced celery stick. Cook for about 5 minutes until the vegetables are softened.

Stir in the tomato paste and cook for 1 minute, ensuring the paste coats the vegetables.
