Ingredients

  • 1 3-4 pounds whole chicken
  • 2 medium, chopped carrots
  • 2 chopped celery stalks
  • 1 large, quartered onion
  • 4 crushed garlic cloves
  • 2 bay leaves
  • 5 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 teaspoon black peppercorns
  • 2 teaspoons sea salt
  • 16 cups water
  • 2 tablespoons apple cider vinegar
  • 1 bunch fresh parsley

Directions

Step 1

Place the whole chicken in a large stockpot.

Step 2

Add the chopped carrots, celery, and quartered onion to the pot.

Step 3

Add the crushed garlic cloves, bay leaves, thyme, rosemary, peppercorns, and sea salt to the pot.

Step 4

Pour in the water and apple cider vinegar, making sure the chicken and vegetables are fully submerged.

Step 5

Cover the pot and bring the mixture to a boil over medium-high heat.

Step 6

Once boiling, reduce the heat to low and let simmer, partially covered, for 3 to 4 hours. Skim off any foam or impurities that rise to the surface.

Step 7

During the last 30 minutes of cooking, add the fresh parsley to infuse more flavor.

Step 8

Carefully remove the chicken from the pot, and set aside. Once cool enough to handle, remove the meat from the bones and refrigerate or freeze for another use.

Strain the broth through a fine mesh sieve into a large bowl or another pot to remove the vegetables and herbs.

Allow the bouillon to cool to room temperature before transferring it to airtight containers.

Refrigerate for up to 5 days, or freeze for up to 3 months.
