Ingredients

  • 1 medium-sized bottle gourd (lauki)
  • 2 tablespoons coconut oil
  • 1 large onion
  • 1 inch piece ginger
  • 4 pieces garlic cloves
  • 1 small green chili
  • 1 large tomato
  • 10 leaves curry leaves
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon cumin powder
  • 0.5 teaspoon red chili powder (optional)
  • 1 cup paleo-friendly vegetable broth or water
  • to taste salt
  • 2 tablespoons cilantro

Directions

Step 1

Peel the bottle gourd, remove the seeds, and cut it into small cubes.

Step 2

In a large pot, heat the coconut oil over medium heat.

Step 3

Finely chop the onion, ginger, garlic, and green chili.

Step 4

Add the cumin seeds to the hot oil and let them sizzle for a few seconds until fragrant.

Add the chopped onion and sauté until it turns golden brown, about 5-7 minutes.
