Ingredients

  • 2 medium, peeled and diced sweet potatoes
  • 1 tablespoon coconut oil
  • 0.5 medium, finely chopped red onion
  • 2 cloves, minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 egg
  • 0.5 cup almond flour
  • 0.25 cup, chopped fresh cilantro
  • 1 tablespoon lime juice
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C). Spread the diced sweet potatoes on a baking sheet and drizzle with half a tablespoon of coconut oil. Roast for 20 minutes or until tender, then let cool slightly.

Step 2

In a skillet, heat the remaining half tablespoon of coconut oil over medium heat. Add the red onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.

In a large bowl, mash the roasted sweet potatoes with a fork or potato masher until smooth.
