Ingredients

  • 3 cups bitterleaf
  • 8 cups water
  • 4 pieces chicken thighs
  • 0.25 cup red palm oil
  • 1 large onion
  • 4 pieces garlic cloves
  • 1 large bell pepper
  • 1 tablespoon fresh ginger
  • 2 tablespoons coconut aminos
  • 1 teaspoon sea salt
  • 0.5 teaspoon crushed red pepper flakes

Directions

Step 1

Wash the bitterleaf thoroughly under running water to reduce its natural bitterness. Soak it in a bowl of warm water for another 10 minutes, then drain and set aside.

Step 2

In a large pot, bring 8 cups of water to a boil. Add chicken thighs and boil for about 20 minutes until partially cooked. Remove the chicken, set aside, and reserve the chicken broth.

Step 3

In a food processor, blend the onion, garlic cloves, bell pepper, and fresh ginger together until smooth.

Heat the red palm oil in a large pot over medium heat. Add the blended mixture and sauté for about 5 minutes until fragrant.
