Ingredients

  • 1 head cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon mustard seeds

  • 10 leaves curry leaves
  • 1 medium onion
  • 1 medium carrot
  • 100 grams french beans
  • 100 grams green peas
  • 1 medium tomato
  • 1 teaspoon ginger garlic paste
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 0.5 teaspoon red chili powder
  • 2 tablespoons Bisi Bele Bath powder
  • 1 tablespoon tamarind paste
  • 1 cup water
  • 1 teaspoon salt
  • 2 tablespoons coriander leaves
  • 10 whole cashews

Directions

Step 1

Cut the cauliflower into small florets and pulse them in a food processor until the texture resembles rice.

Step 2

Heat the olive oil in a large pan over medium heat. Add mustard seeds and let them crackle.

Step 3

Add cumin seeds and curry leaves, and sauté for a few seconds until aromatic.

Add the chopped onion and sauté until translucent.

Add ginger garlic paste and stir for another minute.
