Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 tablespoon Baking powder (grain-free)
  • 0.5 teaspoon Salt
  • 3 Eggs
  • 0.5 cup Coconut milk (full-fat)
  • 0.25 cup Coconut oil, melted
  • 1 pound Ground pork sausage
  • 2 tablespoons Arrowroot starch
  • 1.5 cups Chicken broth
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.25 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix together the almond flour, coconut flour, baking powder, and salt.

Step 3

In a separate bowl, whisk the eggs, then add the coconut milk and melted coconut oil. Mix well.

Step 4

Pour the wet ingredients into the dry ingredients and stir until a dough forms.

Step 5

Using a spoon, scoop the dough onto the prepared baking sheet, forming 2-inch wide biscuits. Flatten the tops slightly.

Step 6

Bake the biscuits in the preheated oven for 15-18 minutes, or until they are golden brown.

Step 7

While the biscuits are baking, cook the ground pork sausage in a large skillet over medium heat, breaking it apart with a spatula, until browned and cooked through.

Step 8

Sprinkle arrowroot starch over the cooked sausage and stir, allowing it to absorb the fat.

Step 9

Gradually add the chicken broth, stirring constantly, and bring the mixture to a simmer. Let it thicken for a few minutes.

Step 10

Season the gravy with garlic powder, onion powder, and black pepper. Adjust seasoning to taste.

Step 11

Once the biscuits are done, remove them from the oven and let them cool slightly.

Step 12

Serve the biscuits warm, topped generously with sausage gravy and garnished with fresh parsley.
