Peel the sweet potatoes and use a spiralizer to create long, thin strands resembling noodles.
Heat 1 tablespoon of coconut oil in a large non-stick skillet over medium heat.
Add the spiralized sweet potatoes to the skillet, seasoning with sea salt and black pepper.
Cook for 8-10 minutes, stirring occasionally, until the sweet potatoes are tender and slightly crisped.
Once done, remove the sweet potato nests from the skillet and divide them onto two serving plates, shaping them into nests with a dip in the center for the eggs.
In the same skillet, add the remaining tablespoon of coconut oil over medium heat.
Carefully crack the eggs into the skillet and cook sunny-side-up until the whites are set but the yolks are still runny, about 3-4 minutes.
Gently place two sunny-side-up eggs on each sweet potato nest.
Garnish with chopped fresh parsley and a sprinkle of crushed red pepper flakes if desired.
Serve immediately and enjoy your Paleo Bird's Nest!
