  • 2 medium sweet potatoes
  • 4 eggs
  • 2 tablespoons coconut oil
  • 2 tablespoons chopped fresh parsley

  • 0.25 teaspoon crushed red pepper flakes (optional)

Directions

Step 1

Peel the sweet potatoes and use a spiralizer to create long, thin strands resembling noodles.

Heat 1 tablespoon of coconut oil in a large non-stick skillet over medium heat.

Add the spiralized sweet potatoes to the skillet, seasoning with sea salt and black pepper.
