Ingredients

  • 2 medium sweet potatoes
  • 2 yellow yams
  • 3 ripe saba bananas (or plantains)
  • 2 small taro roots
  • 3 cups water
  • 2 cups full-fat coconut milk
  • 1 cup tapioca pearls
  • 0.5 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon sea salt

Directions

Step 1

Peel the sweet potatoes, yams, and taro roots. Cut them into bite-sized cubes approximately one inch in size.

Step 2

Peel the saba bananas and slice them into 1/2 inch thick rounds. Set aside.

Step 3

In a large pot, bring the 3 cups of water to a boil over medium heat.

Step 4

Once the water is boiling, add the sweet potatoes, yams, and taro. Reduce the heat to simmer and cook for about 15 minutes or until they start to soften.
