Ingredients

  • 250 grams ground beef
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 medium sweet potatoes
  • 4 slices bacon
  • 2 large eggs
  • 1 large avocado
  • 2 tablespoons olive oil

Directions

Step 1

Peel and grate the sweet potatoes using a coarse grater to create hash browns.

Step 2

In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Scoop half of the grated sweet potatoes into the skillet and form into a round patty. Repeat for the second patty.

Cook the sweet potato hash browns for about 5-7 minutes on each side until they are crispy and golden brown. Remove from skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil and add the bacon slices. Cook the bacon until crispy, about 4-5 minutes per side. Remove and set aside on a paper towel to drain excess fat.
