Ingredients

  • 3 pieces medium beetroots
  • 2 tablespoons extra virgin olive oil
  • 0.25 cup tahini
  • 2 tablespoons fresh lemon juice
  • 2 pieces garlic cloves
  • 1 teaspoon ground cumin
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash the beetroots thoroughly and trim the stems and roots.

Step 3

Wrap each beetroot in aluminum foil and place them on a baking sheet.

Step 4

Roast the beetroots in the preheated oven for about 40-45 minutes, or until they are fork-tender.

Step 5

Allow the beetroots to cool slightly, then peel off the skins. The skins should come off easily after roasting.

Step 6

Roughly chop the peeled beetroots and transfer them to a food processor.

Step 7

Add the extra virgin olive oil, tahini, fresh lemon juice, garlic cloves, ground cumin, sea salt, black pepper, and water to the food processor.
