Ingredients

  • 1 pound beef sirloin
  • 3 medium zucchini
  • 0.25 cup coconut aminos
  • 2 tablespoons sesame oil
  • 1 tablespoon olive oil
  • 3 cloves garlic
  • 1 inch piece ginger
  • 1 whole red bell pepper
  • 1 large carrot
  • 3 stalks green onion
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon crushed red pepper flakes (optional)

Directions

Step 1

Start by slicing the beef sirloin against the grain into thin strips about 1/4 inch thick. Set aside.

Step 2

Using a spiralizer, create zucchini noodles from the 3 medium zucchinis. Set the zoodles aside on paper towels to absorb excess moisture.

Step 3

Peel and mince the garlic cloves and grate the ginger. Cut the red bell pepper into thin strips, julienne the carrot, and slice the green onions diagonally.

Step 4

In a large mixing bowl, combine the sliced beef with coconut aminos, sesame oil, minced garlic, and grated ginger. Toss to coat and let it marinate for about 10 minutes.
