Ingredients

  • 1 pound Beef flank steak
  • 2 cups Fresh spinach leaves
  • 0.5 cup Sundried tomatoes
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 0.25 cup Fresh basil leaves, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 pieces Toothpicks

Directions

Step 1

Lay the beef flank steak flat on a cutting board. Cover with plastic wrap and use a meat mallet to pound evenly to about 1/4-inch thickness.

Step 2

In a bowl, combine fresh spinach, sundried tomatoes, minced garlic, and chopped basil leaves.

Step 3

Season the steak with salt and black pepper.

Step 4

Spread the spinach mixture evenly over the seasoned steak.

Step 5

Starting from one of the shorter ends, tightly roll the steak into a log.

Secure the roll by inserting toothpicks at 1-inch intervals all the way through the steak roll.

Heat olive oil in a large skillet over medium-high heat.
