Ingredients

  • 500 grams ground beef
  • 1 large sweet potato
  • 1 medium onion
  • 2 garlic cloves
  • 1 large egg
  • 100 grams almond flour
  • 50 grams coconut flour
  • 3 tablespoons coconut oil
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika

Directions

Step 1

Peel and grate the sweet potato using a box grater or food processor.

Step 2

Finely chop the onion and garlic.

Step 3

In a large mixing bowl, combine ground beef, grated sweet potato, chopped onion, garlic, egg, almond flour, coconut flour, chopped fresh parsley, salt, black pepper, and paprika.

Step 4

Mix the ingredients thoroughly using your hands until well combined.

Step 5

Form the mixture into small patties about the size of your palm and approximately 2 cm thick. You should have around 8-10 croquettes.

Step 6

Heat coconut oil in a large skillet over medium heat.

Step 7

Once the oil is hot, carefully place the croquettes in the skillet, cooking in batches if necessary to avoid overcrowding.

Step 8

Cook each croquette for 5-6 minutes on each side, or until they are browned and cooked through.

Step 9

Remove the croquettes from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Step 10

Serve hot, garnished with additional fresh parsley if desired.
