  • 1 pound Ground beef
  • 1 large head Cauliflower
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 1 medium Onion
  • 3 large Garlic cloves
  • 2 tablespoons Tomato paste
  • 1 cup Beef broth
  • 2 tablespoons Olive oil
  • 0.5 cup Coconut milk
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Separate the cauliflower into florets and steam them in a large pot until tender, about 10-15 minutes.

Step 3

While the cauliflower is cooking, finely chop the onion, garlic, carrots, and celery.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion, garlic, carrots, and celery and sauté until softened, about 5 minutes.

Step 5

Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, approximately 7-10 minutes.

Step 6

Stir in the tomato paste, beef broth, thyme, rosemary, salt, and pepper. Cook for another 5 minutes until thickened.

Step 7

Transfer the beef mixture into a baking dish, spreading it into an even layer.

Step 8

In a food processor or blender, combine the cooked cauliflower with coconut milk and 1 tablespoon of olive oil. Blend until smooth and creamy.

Step 9

Spread the cauliflower mash over the beef mixture, smoothing it out with a spatula.

Step 10

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.

Step 11

Let it cool for a few minutes before serving. Enjoy your delicious Paleo Beef Cottage Pie!
