Ingredients

  • 4 pieces chicken legs
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 1 teaspoon sea salt
  • 0.25 cup coconut aminos
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dijon mustard

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse the chicken legs under cold water and pat them dry with paper towels.

Step 3

In a large bowl, whisk together olive oil, paprika, garlic powder, onion powder, black pepper, and sea salt.

Step 4

Add the chicken legs to the bowl and massage the seasoning mixture into the chicken until each piece is well coated.

Step 5

Place the seasoned chicken legs on a baking sheet lined with parchment paper or foil.

Step 6

Bake the chicken in the preheated oven for 30 minutes.

Step 7

While the chicken is baking, prepare the paleo BBQ sauce by mixing coconut aminos, apple cider vinegar, honey, tomato paste, smoked paprika, and dijon mustard in a small saucepan over medium heat.

Step 8

Let the sauce simmer gently, stirring occasionally, until it has thickened slightly, about 5 minutes.

Step 9

After the chicken has baked for 30 minutes, remove it from the oven and brush generously with the prepared BBQ sauce.

Step 10

Return the chicken to the oven and bake for an additional 15 minutes, or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).

Step 11

Remove from the oven and allow the chicken to rest for 5 minutes before serving.

Step 12

Serve warm with your favorite Paleo-friendly sides, such as grilled vegetables or a fresh salad.
