Ingredients

  • 4 pounds beef back ribs
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1 cup coconut aminos
  • 1 cup apple cider vinegar
  • 6 ounces tomato paste
  • 0.25 cup honey
  • 2 teaspoons smoked paprika (for BBQ sauce)
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder (for BBQ sauce)
  • 0.25 teaspoon ground cayenne pepper

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, mix together the dry rub ingredients: smoked paprika, garlic powder, onion powder, sea salt, and black pepper.

Step 3

Pat the beef ribs dry with paper towels. Rub the dry spice mixture all over the ribs, ensuring they are evenly coated.

Step 4

Wrap the ribs tightly in aluminum foil and place them on a baking sheet. Bake in the preheated oven for 2.5 to 3 hours, until the meat is tender and pulling away from the bone.

Step 5

While the ribs are baking, prepare the Paleo BBQ sauce. In a medium saucepan, combine the coconut aminos, apple cider vinegar, tomato paste, honey, smoked paprika, chili powder, garlic powder, and cayenne pepper.

Step 6

Bring the BBQ sauce mixture to a simmer over medium heat. Reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally, until thickened. Remove from heat and let cool.

Step 7

Once the ribs are cooked, remove them from the oven and carefully unwrap the foil. Discard any excess fat or liquid.

Step 8

Preheat your grill to medium-high heat.

Step 9

Brush the ribs generously with the prepared Paleo BBQ sauce.

Step 10

Grill the ribs for about 5-10 minutes, brushing more sauce on them and turning occasionally until they are caramelized and slightly charred.

Step 11

Remove the ribs from the grill and let them rest for a few minutes before serving.

Step 12

Serve the ribs with additional BBQ sauce on the side, if desired.
