Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Peel the sweet potatoes and cut them into thin strips, approximately 1/4 inch thick, to form fries.
In a large bowl, combine the sweet potato strips, coconut oil, sea salt, black pepper, garlic powder, and paprika. Toss everything together until the sweet potato fries are evenly coated.
Spread the sweet potato fries in a single layer on the prepared baking sheet, making sure they are not touching each other to ensure they crisp up evenly.
Finely chop the fresh rosemary and sprinkle it over the sweet potato fries.
Bake in the preheated oven for 15 minutes, then flip the fries over using a spatula. Continue to bake for an additional 15 minutes, or until the fries are golden brown and crispy. Keep an eye on them to prevent burning.
Remove the fries from the oven and let them cool for a couple of minutes. They will continue to crisp up as they cool.
