Ingredients

  • 500 grams Sweet potatoes
  • 2 tablespoons Coconut oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 inch piece, finely chopped Ginger
  • 2 cloves, minced Garlic
  • 0.5 teaspoon Salt
  • 8 leaves Curry leaves
  • 2 tablespoons, chopped Fresh cilantro

Directions

Step 1

Peel and cube the sweet potatoes into small 1-inch pieces for even cooking.

Step 2

Heat the coconut oil in a large skillet over medium heat.

Step 3

Add mustard seeds to the hot oil. When they start to splutter, add the cumin seeds and let them sizzle for a few seconds.

Step 4

Add the curry leaves, followed by chopped ginger and minced garlic. Sauté for a couple of minutes until fragrant.

Step 5

Stir in the turmeric powder and red chili powder, cooking for another 30 seconds to release their flavors.

Step 6

Add the cubed sweet potatoes and salt, mixing well to coat them evenly with the spices.

Cover the skillet with a lid and let it cook on low-medium heat for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.

Remove the lid and let any excess moisture evaporate, stirring gently so the sweet potatoes do not break apart.
