Ingredients

  • 4 medium Zucchini
  • 1 cup Fresh basil leaves
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 cup Cherry tomatoes
  • 1 tablespoon Pine nuts
  • 1 medium Lemon
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Use a spiralizer to cut the zucchini into zoodles. Set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Step 3

Mince the garlic cloves and add them to the skillet, sautéing for 1 minute until fragrant.

Step 4

Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they begin to soften.

Meanwhile, toast the pine nuts in a separate small pan over medium heat for 2-3 minutes until golden. Remove from heat and set aside.
