Ingredients

  • 1 medium head cauliflower florets
  • 1 cup almond flour
  • 1 large egg
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 0.5 cup paleo barbecue sauce
  • 0.5 medium, thinly sliced red onion
  • 1 medium, thinly sliced bell pepper
  • 0.5 cup, sliced mushrooms
  • 0.25 cup fresh cilantro

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into small florets and pulse them in a food processor until they reach a rice-like consistency.

Step 3

Steam the cauliflower rice for about 4-5 minutes and then let it cool. Once cooled, place it in a clean kitchen towel and squeeze out as much moisture as possible.

Step 4

In a large bowl, combine the dry cauliflower rice, almond flour, egg, garlic powder, sea salt, and black pepper. Mix until a dough forms.

Step 5

Place the dough on the prepared baking sheet and shape it into a thin, even crust about 1/4 inch thick.

Step 6

Bake the crust for 20 minutes or until it is golden brown and firm.

Step 7

While the crust is baking, heat the olive oil in a skillet over medium heat and add the chicken breast. Cook until the chicken is fully cooked and no longer pink, about 7-8 minutes per side. Let it cool slightly and then shred using two forks.

Step 8

Spread the paleo barbecue sauce evenly over the baked crust.

Step 9

Top the sauce with shredded chicken, sliced red onion, bell pepper, and mushrooms.

Step 10

Return the pizza to the oven and bake for another 10 minutes or until the vegetables are tender.

Step 11

Remove the pizza from the oven, sprinkle with fresh cilantro, and slice into wedges.

Step 12

Serve warm and enjoy your Paleo Barbecue Pizza!
