Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine almond flour, tapioca flour, coconut flour, baking soda, and salt.
In a separate bowl, whisk the eggs, then add melted coconut oil and apple cider vinegar, mixing until well combined.
Pour the wet ingredients into the dry ingredients, add the warm water gradually, and mix well until a dough forms. It should be slightly sticky but manageable.
Divide the dough into 8 equal parts. Roll each part into a long rope (about 18 inches long), then shape each rope into a pretzel by creating a U-shape, crossing the ends, and pressing them into the bottom of the U to form a knot.
In a large pot, bring 4 cups of water to a low boil, then add 0.25 cup of baking soda, stirring to dissolve.
Gently place each pretzel into the boiling water for 20-30 seconds, one or two at a time, and then remove them with a slotted spoon. Place them on the prepared baking sheet, spacing them evenly.
Sprinkle the tops of the pretzels with coarse sea salt.
