Ingredients

  • 150 grams Almond flour
  • 30 grams Coconut flour
  • 60 grams Coconut oil
  • 3 tablespoons Honey
  • 5 large Eggs
  • 400 ml Full-fat coconut milk
  • 2 teaspoons Vanilla extract
  • 0.5 teaspoon Sea salt
  • 2 tablespoons Arrowroot powder
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Lemon zest

Directions

Step 1

Preheat your oven to 180°C (350°F). Line an 8x8 inch baking dish with parchment paper, leaving some overhang to easily lift the slice once done.

Step 2

In a medium bowl, mix the almond flour, coconut flour, and salt. Add in the melted coconut oil and 1 tablespoon of honey and combine until it forms a crumbly mixture.

Step 3

Press the crust mixture evenly into the bottom of the prepared baking dish. Bake in the preheated oven for 10-12 minutes until just lightly golden. Remove from oven and set aside.

Step 4

In a large mixing bowl, whisk together the eggs, coconut milk, remaining 2 tablespoons honey, vanilla extract, arrowroot powder, and lemon zest until fully combined and smooth.

Step 5

Pour the custard mixture over the pre-baked crust. Carefully transfer the dish back into the oven.

Bake for 30-35 minutes or until the custard has set and is lightly golden on top. It should jiggle slightly in the center when moved.

Remove the custard slice from the oven and let it cool to room temperature, then refrigerate for at least 2 hours to completely set.
