Ingredients

  • 4 pieces chicken breast fillets
  • 1 cup almond flour
  • 0.5 cup tapioca starch
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0 coconut oil or olive oil spray
  • 1 for serving lemon wedges

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Pound each chicken breast to an even thickness of about 1/4 inch using a meat mallet or rolling pin to ensure even cooking.

Step 3

Set up a dredging station with two shallow bowls. In the first bowl, mix the almond flour, tapioca starch, garlic powder, onion powder, smoked paprika, salt, and black pepper. In the second bowl, beat the eggs thoroughly.

Step 4

Dip each chicken breast into the beaten eggs, ensuring it's fully coated. Let any excess egg drip off.

Step 5

Transfer the chicken to the almond flour mixture, pressing lightly to ensure the chicken is fully coated on both sides.

Step 6

Place the coated chicken breasts on the prepared baking sheet. Lightly spray the tops with coconut oil or olive oil spray to help achieve a golden, crispy texture.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown. Turn the chicken once halfway through the cooking time for even browning.

Step 8

Once cooked, remove the schnitzel from the oven. Let it rest for a few minutes before serving.

Step 9

Serve hot with lemon wedges on the side for squeezing over the top.
