Ingredients

  • 3 tablespoons coconut flour
  • 6 large eggs
  • 1 cup coconut milk
  • 8 slices bacon
  • 1 medium onion
  • 2 cups spinach
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons nutritional yeast

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lay the bacon slices in a single layer on a baking sheet. Bake for 10-15 minutes or until crispy. Remove, drain on paper towels, and crumble when cool.

Step 3

While the bacon is baking, peel and finely chop the onion.

Step 4

In a medium skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 5

Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside.

Step 6

In a large mixing bowl, whisk together eggs, coconut milk, coconut flour, garlic powder, sea salt, black pepper, and nutritional yeast until smooth and well combined.

Step 7

Add the crumbled bacon and the spinach-onion mixture to the egg mixture. Stir until evenly distributed.

Step 8

Grease a 9-inch pie dish with a bit of olive oil, then pour the egg and bacon mixture into the prepared dish.

Step 9

Bake in the oven for 30-35 minutes, or until the quiche is firm in the center and the top is lightly golden.

Step 10

Allow the quiche to cool for a few minutes before slicing and serving.
