  • 2 tablespoons unsweetened almond milk

  • 2 tablespoons coconut oil
  • 4 bacon slices
  • 2 dairy-free cheese slices
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 avocado
  • 1 cup fresh spinach leaves

Directions

Step 1

In a bowl, whisk together 2 eggs, almond milk, almond flour, salt, and black pepper until the mixture is smooth.

Step 2

Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat. Pour half of the egg mixture into the skillet, tilting the skillet to spread evenly, forming an 'egg pancake' about 6 inches in diameter.

Step 3

Cook the egg pancake for about 2-3 minutes on each side, or until set and lightly browned. Remove and set aside. Repeat with the remaining half of the mixture to make another egg pancake.
