Preheat the oven to 375°F (190°C).
Lightly grease a standard 12-cup muffin tin with coconut oil.
In a skillet over medium heat, cook the bacon slices until crispy. Remove the bacon and place it on a paper-towel-lined plate to cool. Once cooled, crumble the bacon into small pieces.
Using the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Add finely chopped red bell pepper and sauté for about 3-4 minutes until softened.
Add chopped spinach to the skillet and cook for an additional 2 minutes until wilted. Remove from heat and set aside.
In a large mixing bowl, whisk together the eggs and coconut milk until well combined.
Stir in the crumbled bacon, sautéed bell peppers, spinach, chopped green onions, sea salt, and black pepper.
Pour the egg mixture evenly into the prepared muffin cups, filling each about 3/4 full.
