Ingredients

  • 8 eggs
  • 6 slices bacon
  • 0.25 cups coconut milk
  • 0.5 cup red bell pepper
  • 1 cup spinach
  • 3 tablespoons green onions
  • 0.5 teaspoons sea salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon coconut oil

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Lightly grease a standard 12-cup muffin tin with coconut oil.

Step 3

In a skillet over medium heat, cook the bacon slices until crispy. Remove the bacon and place it on a paper-towel-lined plate to cool. Once cooled, crumble the bacon into small pieces.

Step 4

Using the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Add finely chopped red bell pepper and sauté for about 3-4 minutes until softened.

Add chopped spinach to the skillet and cook for an additional 2 minutes until wilted. Remove from heat and set aside.
