Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with coconut oil to prevent sticking.
In a medium-sized mixing bowl, crack the eggs and whisk them until well blended.
Chop the cooked bacon into small pieces and add it to the egg mixture. Add the grated Gruyere cheese, coconut milk, chopped chives, salt, and pepper.
Mix all the ingredients together until they are evenly distributed.
