Ingredients

  • 600 grams chicken breast
  • 2 tablespoons coconut oil
  • 1 large red bell pepper
  • 1 stalk lemongrass stalk
  • 4 medium shallots
  • 3 cloves garlic cloves
  • 1 inch ginger
  • 1 teaspoon turmeric powder
  • 1 medium red chili pepper
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons coconut aminos

Directions

Step 1

Place the chicken breast in a pot and add enough water to fully cover it. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 12-15 minutes or until the chicken is cooked through.

While the chicken is cooking, finely slice the red bell pepper, chop the lemongrass (using only the tender inner parts), peel and mince the shallots, mince the garlic cloves, and grate the ginger.
