  • 4 pieces boneless chicken thighs
  • 0.5 cup coconut flour
  • 0.5 cup tapioca starch

  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 whole lime, juiced

Directions

Step 1

Prepare the chicken by patting it dry with paper towels and seasoning both sides with half of the salt and the black pepper.

Set up a dredging station with two shallow bowls. In one bowl, mix the coconut flour with a pinch of sea salt. In the second bowl, beat the egg until smooth.

Dip each chicken thigh into the egg, allowing the excess to drip off, then coat with the coconut flour mixture, pressing gently to adhere.
