Ingredients

  • 2 whole avocado
  • 1 tablespoon lemon juice

  • 4 whole large eggs
  • 1 tablespoon white vinegar
  • 1 teaspoon olive oil
  • 2 tablespoons fresh cilantro
  • 2 tablespoons pumpkin seeds

Directions

Step 1

Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until creamy but still slightly chunky.

Step 2

Add lemon juice, sea salt, and black pepper to the mashed avocado and mix well. Set aside.

Toast the paleo-friendly bread slices until golden brown and crispy.
