Ingredients

  • 1 whole Large sweet potato
  • 1 whole Avocado
  • 2 large Eggs
  • 2 tablespoons Olive oil
  • 1 teaspoon Lemon juice
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Ground black pepper
  • 1 tablespoon Fresh chives

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the sweet potato thoroughly and slice it lengthwise into 1/4-inch thick slices.

Step 3

Lightly brush each slice with 1 tablespoon of olive oil on both sides and place them on a baking sheet.

Step 4

Bake the sweet potato slices for about 15 minutes, flipping them halfway through, until they are fork-tender and lightly browned.

While the sweet potatoes are baking, halve the avocado and remove the pit. Scoop out the flesh into a small bowl.

Add lemon juice, a pinch of sea salt, and black pepper to the avocado. Mash with a fork until smooth and creamy.
