Ingredients

  • 1 large ripe avocado
  • 4 slices bacon strips
  • 1 large sweet potato
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Preheat oven to 425°F (220°C).

Step 2

Wash and dry the sweet potato. Cut it into 1/4 inch thick slices lengthwise to resemble slices of bread.

Step 3

Place sweet potato slices on a baking sheet and brush both sides lightly with olive oil.

Step 4

Bake in the preheated oven for 15-20 minutes, flipping halfway through, until tender and slightly crisped.

Step 5

Meanwhile, cook the bacon in a skillet over medium heat until crispy. Remove and place on a paper towel-lined plate to drain excess fat.

Step 6

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.

Step 7

Add lemon juice, salt, and black pepper to the avocado, and mash with a fork until smooth and creamy.

Step 8

Once the sweet potato slices are done, remove from the oven and let cool slightly.

Step 9

Spread the mashed avocado evenly on each slice of baked sweet potato.

Step 10

Break the bacon into pieces and top the avocado with equal amounts of bacon.

Step 11

Sprinkle red pepper flakes on top if using for an extra kick.

Step 12

Serve immediately and enjoy your Paleo Avocado Toast with Bacon!
