Ingredients

  • 1 medium sweet potato
  • 1 ripe avocado
  • 1 tablespoon fresh lemon juice

  • 5 cherry tomatoes, halved
  • 2 tablespoons fresh cilantro leaves
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and dry the sweet potato. Slice it lengthwise into approximately 1/4 inch thick slices.

Step 3

Place the sweet potato slices on a baking sheet lined with parchment paper. Brush the slices with the olive oil on both sides.
