  • 2 whole Avocado
  • 1 medium Cucumber
  • 1 medium Carrot
  • 5 sheets Nori sheets
  • 2 tablespoons Coconut aminos
  • 1 tablespoon Rice vinegar
  • 0.5 teaspoon Sea salt

Directions

Step 1

Begin by preparing the cauliflower rice. Cut the cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency.

Step 2

In a skillet over medium heat, add the cauliflower rice and season with sea salt. Cook for about 5 minutes, stirring occasionally, until the cauliflower is tender.

Remove from heat and stir in the rice vinegar. Allow the cauliflower rice to cool to room temperature.

While the cauliflower rice cools, prepare the other fillings. Slice the avocado into thin strips, peel and slice the cucumber into matchsticks, and julienne the carrot.
