Begin by preparing the cauliflower rice. Cut the cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency.
In a skillet over medium heat, add the cauliflower rice and season with sea salt. Cook for about 5 minutes, stirring occasionally, until the cauliflower is tender.
Remove from heat and stir in the rice vinegar. Allow the cauliflower rice to cool to room temperature.
