In a large bowl, combine the ground beef and ground lamb. Mix together until well incorporated.
Mince the garlic cloves finely, then add them to the meat mixture.
Add the sea salt, black pepper, paprika, baking soda, water, and cayenne pepper to the bowl.
Using your hands, mix everything thoroughly until all ingredients are evenly distributed. The mixture should be sticky and well combined.
Take a portion of the mixture (about the size of a golf ball) and shape it into a small sausage, approximately 10 cm in length. Repeat with the remaining mixture.
