Ingredients

  • 1 cup Almond flour
  • 0.5 cup Chopped dried apricots
  • 0.5 cup Chopped dates
  • 0.5 cup Shredded unsweetened coconut
  • 2 tablespoons Chia seeds
  • 0.25 cup Sunflower seeds
  • 0.25 cup Pumpkin seeds
  • 0.25 cup Coconut oil, melted
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Baking soda
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or lightly grease with coconut oil.

Step 2

In a large mixing bowl, combine almond flour, chopped dried apricots, chopped dates, shredded coconut, chia seeds, sunflower seeds, and pumpkin seeds.

In a separate small bowl, whisk together the melted coconut oil, honey, and vanilla extract until well combined.
