  • 2 tablespoons fresh parsley
  • 2 tablespoons pomegranate seeds

Directions

Step 1

Preheat your oven to 400°F (200°C).

Prick the aubergines with a fork to allow steam to escape, then place them on a baking sheet.

Roast the aubergines in the oven for about 25 minutes, or until they are soft and the skins are charred, turning them once during roasting.
