Ingredients

  • 0.5 cup almonds
  • 0.5 cup walnuts
  • 0.5 cup hazelnuts
  • 0.5 cup dried apricots
  • 0.5 cup raisins
  • 0.5 cup dried figs
  • 0.5 cup pitted dates
  • 1 medium peeled apple, diced
  • 0.25 cup dried cranberries
  • 1 teaspoon orange zest
  • 0.25 cup pumpkin seeds
  • 0.25 cup unsweetened shredded coconut
  • 0.25 cup honey
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.25 teaspoon cloves
  • 0.5 cup pomegranate seeds
  • 4 cups water

Directions

Step 1

Begin by soaking almonds, walnuts, and hazelnuts in water overnight or for at least 6 hours to soften them.

Step 2

Drain and rinse the soaked nuts. Roughly chop them and set aside.

Step 3

In a large pot, combine 4 cups of water with diced apple, dried apricots, raisins, chopped dried figs, pitted dates, and dried cranberries.

Step 4

Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 30-40 minutes, stirring occasionally until the fruits are soft.

Step 5

Add the chopped nuts, orange zest, pumpkin seeds, shredded coconut, honey, cinnamon, nutmeg, and cloves to the pot.

Step 6

Continue to simmer for another 20-30 minutes until all ingredients are well combined, and the mixture has thickened to your liking.

Step 7

Remove from heat and let the pudding cool to room temperature—it will further thicken as it cools.

Step 8

Once cooled, stir in half of the pomegranate seeds.

Step 9

Spoon the Asure into individual serving dishes and garnish with the remaining pomegranate seeds on top.

Step 10

Serve immediately or refrigerate for a few hours to enjoy it chilled.
