Ingredients

  • 1 large head Cauliflower
  • 3 tablespoons Extra virgin olive oil
  • 3 units Garlic cloves, minced
  • 1 medium Yellow onion, chopped
  • 500 grams Ground beef
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Tomato sauce
  • 4 units Eggs
  • 2 units Ripe bananas

Directions

Step 1

Start by preparing the cauliflower rice. Remove the leaves and core from the cauliflower, and cut it into chunks. Use a food processor to pulse into rice-sized pieces.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, and sauté for about 3-4 minutes until the onion is translucent.

Step 3

Add the ground beef to the skillet, stirring to combine with the garlic and onion. Cook until the beef is browned, around 7-8 minutes.

Step 4

Season the beef with paprika, salt, and black pepper. Pour in the tomato sauce, reduce the heat to low, and let it simmer for about 10 minutes so the flavors meld together.

Step 5

In another pan, heat 1 tablespoon of olive oil over medium heat. Add the processed cauliflower rice, stirring occasionally until tender, about 5-7 minutes.

Step 6

While the beef mixture and cauliflower rice are cooking, prepare the fried bananas. Peel and slice the bananas lengthwise. Heat the remaining olive oil in a frying pan over medium heat and fry the banana slices until golden brown on each side, around 2-3 minutes per side. Remove and set aside.

Step 7

Use the same frying pan to prepare the sunny-side-up eggs. Crack the eggs into the pan and cook until the whites are set, but the yolk remains runny, about 3-4 minutes.

Step 8

To serve, divide the cauliflower rice among four plates. Top each with a portion of the beef mixture, a fried egg, and fried banana slices. Serve immediately and enjoy your paleo-friendly Arroz Cubana.
