Ingredients

  • 1 cup Almond flour
  • 0.5 cup Tapioca starch
  • 2 tablespoons Coconut flour
  • 0.5 teaspoon Sea salt
  • 1 cup Warm water
  • 2 tablespoons Olive oil
  • 1 pound Beef chuck roast
  • 1 medium Onion, chopped
  • 3 Garlic cloves, minced
  • 1 cup Beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Garlic powder
  • 1 cup Dairy-free cheese
  • 0.25 cup Cilantro, chopped

Directions

Step 1

In a mixing bowl, combine almond flour, tapioca starch, coconut flour, and sea salt. Gradually add warm water and olive oil, mixing until a dough forms. Knead dough for a few minutes until smooth.

Step 2

Divide dough into 8 equal portions, roll each into a ball, then flatten into discs about 1/2-inch thick. Preheat a non-stick skillet over medium heat and cook the arepas for 4-5 minutes on each side until golden brown. Set aside.

Step 3

For the beef, heat a tablespoon of olive oil in a large pot over medium heat. Sear beef on all sides until browned. Remove beef and set aside.

In the same pot, add chopped onion and garlic, sauté until soft. Stir in tomato paste, paprika, cumin, onion powder, and garlic powder, cooking for another minute.

Return beef to the pot, add beef broth. Bring to a simmer, cover, and let cook on low heat for about 3 hours or until beef is tender and easily shreds with a fork.

Once cooked, remove beef from the pot, shred using two forks, and return to the pot. Mix shredded beef with the sauce.

To assemble, slice arepas open, fill with shredded beef, top with dairy-free cheese and chopped cilantro. Serve warm.
