Ingredients

  • 500 grams taro root (arbi)
  • 3 tablespoons coconut oil
  • 1 teaspoon cumin seeds
  • 1 inch piece, grated ginger
  • 1 finely chopped green chili
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon salt
  • 1 tablespoon lime juice
  • 2 tablespoons, chopped fresh coriander leaves

Directions

Step 1

Peel and wash the taro roots thoroughly. Cut them into medium-sized pieces.

Step 2

In a large pot, bring water to a boil. Add a pinch of salt and boil the taro root pieces for about 10 minutes or until they are tender but not mushy. Drain and set aside.

Heat coconut oil in a pan over medium heat. Once the oil is hot, add cumin seeds. Allow them to splutter.

Add grated ginger and chopped green chili to the pan and sauté for 1-2 minutes until fragrant.

Add turmeric powder, coriander powder, red chili powder, and salt. Stir well to combine the spices.

Add the boiled taro root pieces to the pan, and gently toss them until they are well coated with the spice mixture.
