Ingredients

  • 500 grams Taro root
  • 3 tablespoons Coconut oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 1 inch piece, grated Fresh ginger
  • 2 sliced Green chilies
  • 2 tablespoons, chopped Fresh coriander leaves

Directions

Step 1

Wash the taro root thoroughly to remove any dirt. Place the taro root in a pot, cover with water, and bring to a boil. Cook for about 10-12 minutes until tender but not mushy.

Step 2

Drain the water and allow the taro root to cool. Once cooled, peel the skins off and slice the taro root into medium-sized pieces.

Step 3

Heat coconut oil in a large pan over medium heat. Add cumin seeds and mustard seeds. Allow them to crackle for a few seconds.

Step 4

Add the grated ginger and sliced green chilies to the pan. Sauté for 2-3 minutes until the raw aroma disappears.

Step 5

Add turmeric powder, coriander powder, red chili powder, and salt to the ginger and chili mixture. Stir well to combine the spices.

Step 6

Gently add the sliced taro root to the pan, stirring to coat with the spice mixture. Cook for about 10-15 minutes on medium heat, stirring occasionally until the taro root pieces are well roasted and slightly crispy on the edges.

Step 7

Remove from heat and garnish with freshly chopped coriander leaves.
