Ingredients

  • 1 medium head Cauliflower
  • 1 cup Almond flour
  • 0.25 cup Tapioca flour
  • 2 large Eggs
  • 0.25 cup Nutritional yeast
  • 1 teaspoon Salt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Olive oil
  • 2 tablespoons Chopped fresh parsley
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles rice-sized granules.

Step 2

Transfer the cauliflower rice to a microwave-safe bowl. Cover and microwave on high for about 4 minutes or until tender. Allow it to cool slightly.

Step 3

Once cooled, place the cauliflower rice in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.

In a large mixing bowl, combine the strained cauliflower rice, almond flour, tapioca flour, eggs, nutritional yeast, salt, garlic powder, onion powder, black pepper, parsley, and optional red pepper flakes.
