Ingredients

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon sea salt
  • 0.25 cup coconut oil (solid)
  • 3 tablespoons honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup dried apricots, chopped
  • 0.25 cup slivered almonds

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, baking soda, and sea salt. Stir well to ensure even distribution of the ingredients.

Step 3

Cut the solid coconut oil into the dry ingredients using a pastry cutter or two knives until the mixture resembles fine crumbs.

Step 4

In a separate bowl, whisk together the honey, eggs, and vanilla extract until smooth.

Step 5

Add the wet ingredients to the dry ingredients and mix until a dough forms. The dough will be slightly sticky.

Step 6

Fold in the chopped dried apricots and slivered almonds until evenly distributed throughout the dough.

Step 7

Transfer the dough to the prepared baking sheet. Using your hands, shape it into a round disc about 3/4-inch thick.

Step 8

With a sharp knife, cut the disc into 8 equal wedges and gently separate them so they have a little room to expand while baking.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the scones are golden brown on the edges and a toothpick inserted into the center comes out clean.

Step 10

Remove from the oven and allow the scones to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
