Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Coconut flour
  • 2 tablespoons Arrowroot starch
  • 0.25 cup Coconut oil
  • 1 large Egg
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 3 Medium apples
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Nutmeg
  • 1 tablespoon Lemon juice
  • 2 tablespoons Water

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine almond flour, coconut flour, and arrowroot starch.

Step 3

Melt the coconut oil and add it to the dry mixture along with the egg, honey, vanilla extract, and salt. Mix until a dough forms.

Step 4

Roll the dough between two sheets of parchment paper to about 1/8 inch thickness. Using a 4-inch round cutter, cut circles of dough. Gather any scraps, reroll and cut until you have 8 circles.

Peel and core the apples, then chop them into small pieces.

In a medium saucepan, combine apples, cinnamon, nutmeg, lemon juice, and water. Cook over medium heat, stirring occasionally, until apples are softened and liquid is absorbed (about 5-7 minutes).
