Ingredients

  • 240 ml Apple cider
  • 120 g Almond flour
  • 30 g Coconut flour
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 0.5 tsp Nutmeg
  • 0.5 tsp Salt
  • 2 large Eggs
  • 60 ml Maple syrup
  • 1 tsp Vanilla extract
  • 60 ml Coconut oil, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a doughnut pan with coconut oil.

Step 2

In a small saucepan, bring the apple cider to a boil. Reduce the heat and let it simmer until the volume is reduced to about half (120 ml). This should take around 10-15 minutes. Set aside to cool.

Step 3

In a large mixing bowl, whisk together almond flour, coconut flour, baking soda, cinnamon, nutmeg, and salt.

Step 4

In another bowl, beat the eggs. Mix in the cooled apple cider reduction, maple syrup, vanilla extract, and melted coconut oil until well combined.

Step 5

Pour the wet ingredients into the dry ingredients and mix until just combined.

Step 6

Spoon the batter into the prepared doughnut pan, filling each well about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the doughnuts comes out clean.

Allow the doughnuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Optional: For extra flavor, brush the top of cooled doughnuts with a little more melted coconut oil and sprinkle with a mixture of cinnamon and coconut sugar.
