Ingredients

  • 1 cup apple cider
  • 2 cups blanched almond flour
  • 1 tablespoon tapioca flour
  • 2 tablespoons coconut flour
  • 0.33 cup coconut sugar
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon sea salt
  • 2 large eggs
  • 0.25 cup maple syrup
  • 0.25 cup coconut oil
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a donut pan generously with coconut oil.

Step 2

In a small saucepan over medium heat, simmer the apple cider until it reduces to about 1/4 cup. This should take about 10 minutes. Let it cool slightly.

Step 3

In a large bowl, whisk together the almond flour, tapioca flour, coconut flour, coconut sugar, baking soda, cinnamon, nutmeg, and sea salt.

Step 4

In a separate bowl, beat the eggs and then whisk in the cooled reduced apple cider, maple syrup, melted coconut oil, and vanilla extract.

Step 5

Pour the wet ingredients into the dry ingredients and mix until just combined.

Step 6

Spoon the batter into the greased donut pan, filling each well about two-thirds full.

Step 7

Bake in the preheated oven for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Enjoy your Paleo-friendly treat!
